The choice to use demerara sugar specifically, rather than regular brown sugar or turbinado sugar, was to achieve a focused authenticity for a true southern peach cobbler. Demerara sugar is a type of sugar that was popularly produced in the former Dutch/British colony of Demerara, or modern-day Guyana. Demerara sugar is visually similar to turbinado sugar, but is sticky in texture, has a uniform crystal size, and has a darker, more molasses-forward flavor profile than turbinado. Although demerara sugar is certainly more popular in Europe than the U.S, some heritage recipes from the American South still call for this specific type of sugar to be used, which highlights the remnants of British colonialism and the influence that geopolitics has on the development of human cuisine and culture at large.
